Chocolate Hazelnut Granola Parfait

OH, HOMEMADE OIL-FREE GRANOLA- “How do I love thee? Let me count the ways:”

1. NO OIL! (Most granola recipes contain an overabundance of oil. But why add a zillion extra calories when you don’t even need to.)

2. Lower in sugar than most granolas. But no compromise on taste. Winner!

3. The house smells AMAZING while baking it. (And for several hours afterwards.)

4. Add-ins and toppings are completely customizable! Include ALL your favorites, or just keep it simple. It’s up to you!

5. Once you learn how QUICK and EASY it is to make your own granola, you’ll never want to BUY granola again.

I could go on, and on and on! But why waste anymore time TALKING about this crunchy, sweet and cinnamon-y, oil-free granola?  JUST MAKE SOME ALREADY!

Homemade Oil-free Granola

Homemade Oil-free Granola

*NOTE: I usually just make the BASIC recipe (with no mix-ins) for our everyday use. But If I’m making granola for a special occasion, or to give as a gift, I’ll choose two or three mix-ins to add at the end of baking.

Ingredients

BASIC RECIPE: 

  • 4 cups rolled oats (NOT quick oats)
  • 1/2 cup brown sugar, packed
  • 1/4 cup honey (Can substitute maple syrup, but results in less of a crunch.)
  • 2 Tablespoons water
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda

OPTIONAL MIX-IN IDEAS: (Choose as many as you like and stir in at the very END of baking.)

  • 1 cup raisins, cranberries, or dried fruit
  • 1 cup shredded coconut, toasted
  • 1 cup sliced almonds
  • 1 cup toasted pecan pieces
  • 3/4 cup toasted hazelnuts, chopped
  • 1/2 cup vegan mini chocolate chips
  • 1/3 cup pepitas
  • 1/3 cup cacao nibs
  • 1/4 cup whole flax seeds
  • 1/4 cup crystalized ginger, diced
  • Other mix-ins as desired

Directions

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper. Place the 4 cups of rolled oats in a large mixing bowl and set aside.
  2. In a medium saucepan, combine brown sugar, honey, water, cinnamon, and salt. Bring mixture to a boil while stirring frequently. Once mixture reaches a boil, allow to boil for 1 minute, whisking constantly. Remove from heat and stir in vanilla and baking soda and mix until foamy.
  3. Carefully pour hot sugar mixture over oat mixture and stir well until the syrup fully coats the oats. Spread mixture into an even layer on a parchment lined baking sheet. (It is essential that you line the baking sheet with parchment paper, otherwise the granola will stick to the pan, and will be very difficult to remove.)
  4. Bake in preheated oven for 25-30 minutes, until light golden brown, removing from the oven and stirring half way through baking time.
  5. Once the granola is golden brown on all sides, remove baking sheet from the oven and toss in any optional mix-ins. (Use a spatula to stir and press the mix-ins into the warm granola. Again spread the mixture into an even layer on the parchment, and allow the granola to cool completely.  Once cool, break the granola into large or small clusters. Store granola in an airtight container or jar.
